2 tablespoons red wine vinegar |
1/2 cup olive oil |
1 tablespoon dijon-style mustard |
4 teaspoons curry powder |
1/4 teaspoon salt |
8 ounces mixed baby greens |
1/2 cup whole pecans, toasted and chopped |
1/4 cup raw pumpkin seeds, toasted |
1 gala apples, diced |
1/4 cup raisins |
Directions:
1. Combine vinegar, oil, mustard, curry powder and salt in a jar and shake vigorously to combine. 2. Place greens in a bowl with pecans, pumpkin seeds, apple and raisins. 3. Add about half of the dressing and toss thoroughly. 4. Add more vinaigrette if needed. |
