Mistakingly Great Chocolate Chip Banana Bread |

I wanted to come up with a Vegan Banana Bread and scanned many recipes to my liking and put together the following recipe. Not having the right size pan on hand was the fabulously moist result. Ingredients:
preheat oven to 350 degrees |
oil or spray for the pan. i used an 8 x 8 pan |
3 very ripe bananas.i keep overly ripe bananas in the freezer and thaw. |
1/4 cup soy, coconut, or almond milk |
1/4 tsp. vinegar |
1 tsp. vanilla |
1/2 cup oil |
2 cups flour |
1/2 cup sugar |
1/2 cup brown sugar |
1 tsp. baking powder |
3/4 tsp. baking soda |
1 tsp. cinnamon |
1/2 tsp. salt |
desired amount of chocolate chips..about 3/4-1 cup |
Directions:
1. To aforementioned “milk” add the vinegar; stir and set aside 2. Combine and sift the dry ingredients in a bowl and set aside 3. In a food processor combine the bananas with vanilla and oil and blend well; stir in the milk and vinegar. 4. Slowly combine the dry ingredients until incorporated completely. 5. Pour into prepared pan and bake…….every 15 minutes turn the pan a half turn…..the bread will be done in 30-45 minutes or when the top center is firm and a large toothpick tester comes out clean. 6. • I couldn’t find a loaf pan or even a 9 X 9 pan and I think that is why this cake came out so moist and yet sliceable. 7. • You can also add applesauce to the batter instead of oil |
