missy's Sweet Potato Casserole |

This is the recipe I have been using for years, and I am putting it here for safekeeping. I was making it this morning for Thanksgiving and noticed that my copy is starting to get soiled. This is so good, you could almost eat it for dessert. Ingredients:
3 cups cooked sweet potatoes (i use a 40 oz. can of bruce's, drained) |
3/4 cup sugar |
1/3 cup butter (melted) |
2 eggs (beaten) or 3 egg whites |
1/2 cup milk |
1 teaspoon vanilla |
1/4 teaspoon cinnamon |
1/3 cup flour |
1 cup light brown sugar |
1 cup chopped pecans |
1/3 cup butter (melted) |
Directions:
1. Preheat oven to 350 degrees. 2. Mash the sweet potatoes. 3. Mix the sugar, melted butter, eggs, milk, vanilla and cinnamon into the sweet potatoes. 4. Spray a baking dish with non-stick cooking spray and pour potato mixture into it. 5. Mix the topping ingredients together in a small bowl. 6. Sprinkle topping over the sweet potato mixture. 7. Bake for approximately 35 minutes, or until the casserole gets brown and bubbly. |
