My grandma always made this delicious cake. It is a little rich. Ingredients:
cake |
2 sticks of butter |
2 cups of sugar |
1/3 cup of cocoa |
4 eggs |
1 1/2 tsp. baking powder |
1 tsp. vanilla |
1 1/2 cup of flour |
1 1/2 cup angel flake coconut |
1 cup of chopped pecans |
1 jar (13 oz.) of marshmallow crème |
icing |
1 stick of butter |
1/2 cup of cocoa |
1/2 cup of pet milk |
1 box of powdered sugar |
vanilla extract to taste |
Directions:
1. Cream sugar, butter and cocoa 2. Add eggs and vanilla 3. Add flour and beat for 4 minutes 4. Fold in nuts and coconut 5. Bake for 30-35 minutes at 350 degrees in a 9 x 13 pan 6. Cool 10 minutes 7. Spread jar of marshmallow crème over top of cake 8. Then add icing (directions on making icing below) 9. Melt butter in a small sauce pan 10. Add milk and cocoa and then bring to a boil (Be careful not to scorch) 11. Pour in bowl with 1 box powdered sugar 12. Beat well 13. Add vanilla and mix thoroughly 14. Spread over cake |
