from this weeks paper, another use for bourbon. Ingredients:
butter, and |
flour, for the pan |
3/4 cup coffee |
1/4 lb butter |
3 ounces unsweetened chocolate, chopped |
1 egg |
1/3 cup bourbon |
1 teaspoon vanilla extract |
1 cup cake flour |
1 cup sugar |
1/2 teaspoon baking soda |
1 pinch salt |
3/4 cup chopped pecans |
1/2 cup raisins |
whipped cream (to garnish) |
Directions:
1. preheat oven to 275. 2. grease and flour a 9x4 loaf pan. 3. mix coffee, butter, chocolate in a bowl and microwave until chocolate is melted 1-2 minutes. 4. cool. 5. beat the egg. 6. stir in bourbon and vanilla. 7. add to chocolate mixture, stirring. 8. in a medium bowl sift flour, sugar, baking soda, salt. 9. beat into chocolate mixture until smooth. 10. stir in pecans and raisins. 11. pour into loaf pan. 12. bake 45-55 minutes. 13. remove and cool in pan on wire rack for 20 minutes. 14. remove from pan and cool completely. 15. serve with whipped cream. |
