Hush puppies are a southern tradition dating back to campfire days when fried fish were being prepared and these cornmeal balls were tosed to the dogs with the arning: Hush Puppies. They are a marriage with fried fish, especially fried catfish. Ingredients:
3 cups cornmeal (yellow or white) |
1 3/4 cups flour |
2 tbs baking powder |
2 tsp salt |
1 tbs sugar |
1/4 tsp black pepper |
3 eggs, beaten |
1 1/4 cups milk |
2/3 cup onion, finely chopped |
1/2 cup oil , plus oil for deep frying |
Directions:
1. Stir dry ingredients together. combine eggs, milk, onionj, sugar and oil and add to dry mixture. with spoon, stir only until blended. Take two tablespoons and with one take out a mounded amount of batter (about 1 1/2 tablespoons and with over spoon form into a ball. Drop in hot oil (350 degrees) Fry until browned. Drain on paper towels or brown grocery bag. 2. Note: this recipe makes about 25 hushpuppies. A llow about 3 per person. Recipe can be multiplied or reduced. |
