This pie is delicious...maybe a little like chess pie. It is very easy to make....just mix in one bowl, pour into the crust, and 1 hour later, you have a wonderful pie!! Ingredients:
3/4 stick unsalted butter, melted |
3 eggs |
3 tablespoons flour |
1-1/2 cups sugar |
1 cup crushed pineapple, drained |
1 cup coconut |
1 9 inch unbaked pie shell |
Directions:
1. Beat eggs slightly 2. Add sugar to eggs, whisk slightly 3. Add flour, stir 4. Add melted butter, whisk slightly 5. Add pineapple and coconut, stir 6. Pour into pie shell 7. Bake at 35O degrees until set and lightly browned 8. NOTE: Mrs. Mitchell was a lovely lady and a wonderful cook. She was known for this pie!. |
