This is a family favorite, a little different from other apple cakes that I have made. It is extremely moist!. You just can't get enough of it!! Ingredients:

1 1/2 cups wesson oil |
2 cups sugar |
1 teaspoon salt |
1 teaspoon soda |
2 eggs |
2 winesap apples, peeled and chopped (have used other apples) |
1 cup chopped nuts |
3 cups all-purpose flour |
2 teaspoons good quality vanilla |
icing |
6 tablespoons softened butter |
1 (1 pound) box powdered sugar |
juice and grated rind of 1/2 lemon |
add more lemon juice if needed |
Directions:
1. CAKE 2. Combine Wesson oil, sugar, salt, and soda 3. Add eggs, one at a time, beating into mixture 4. Add apples, nuts, and flour, mixing well 5. Add vanilla and blend evenly 6. Pour into greased and floured 9X13 pan (I use a 9X13 glass pan) 7. Bake at 325 degrees for 10 min., THEN turn oven to 225 and bake for 1 hour 8. ICING 9. Combine ingredients for the icing 10. Beat until smooth 11. Spread on cooled cake |
