3 short cucumbers |
500 g silken firm tofu, drained |
3 tablespoons white miso |
1 tablespoon mirin |
1 tablespoon sugar |
1 tablespoon rice vinegar |
1 egg yolk |
1/4 cup rice vinegar |
1/4 teaspoon shoyu |
1 1/2 tablespoons sugar |
1 tablespoon mirin |
Directions:
1. sprinkle cucumber with salt and set aside for 20 minutes. 2. place tofu in colander, put two plates on top of tofu and leave for 30 minutes to extract any moisture. 3. place miso, mirin, sugar, rice vinegar, and 2 tbsp water in a saucepan and stir over low heat for 1 minutes till sugar dissolves. 4. remove from heat and add egg yolk, whisking till glossy. cool slightly. 5. cut tofu into thick sticks and put on baking tray. 6. brush miso mixture over tofu and broil for 6 minutes each side till tofu is light golden. 7. to make dressing put ingredients together and whisk. drizzle over tofu and serve. |
