Can make this as a risotto by adding less water and freezing for other recipes.. Very Nourishing and warming Autumn soup.
Ingredients:
2 cups water
1/2 cup basmati rice
1 teaspoon chopped parsley
1 teaspoon chopped ginger
sprinkle of chopped chilli
1/4 teaspoon lemon jice
1 teaspoon local honey
1 lightly beaten fresh egg
1 tablespoon miso with seaweed
2 tablespoon grated raw beetroot
Directions:
1. Boil rice and 1 tablespoon of grated beetroot in water until cooked. 2. Add ginger and parsley. Cook for 1 minute 3. Add honey and stir 4. Add egg and stir gently 5. Take off the stove and stand for 1 minute 6. Add fresh lemon juice 7. Add miso and stir gently (don't cook the miso - it'll kill the lively vitamins.) 8. Serve in a bowl 9. Add raw grated beetroot and parsley garnish.
