MISO MARINATED GRILLED EGGPLANT This recipe came from an estate sale. I obtained it when I purchased the family collection from the Monroe Estate in Stephenville, Texas in 1982.
Ingredients:
8 japanese eggplants
1/2 cup miso
2 tablespoons chopped fresh ginger
3 cloves garlic chopped
1/4 cup sake or dry sherry
1 tablespoon sesame oil
2 tablespoons hoisin sauce
2 tablespoons lime or lemon juice
2 teaspoons black bean chile paste
Directions:
1. Spray or rub grill with oil.
2. Cut eggplants lengthwise and score each on cut side a few times with sharp knife.
3. Combine remaining ingredients then coat eggplant and marinate at room temperature 2 hours.
4. Grill eggplants over medium high heat 5 minutes per side then serve immediately.
