MISO MARINATED GRILLED EGGPLANT This recipe came from an estate sale. I obtained it when I purchased the family collection from the Monroe Estate in Stephenville, Texas in 1982. Ingredients:
8 japanese eggplants |
1/2 cup miso |
2 tablespoons chopped fresh ginger |
3 cloves garlic chopped |
1/4 cup sake or dry sherry |
1 tablespoon sesame oil |
2 tablespoons hoisin sauce |
2 tablespoons lime or lemon juice |
2 teaspoons black bean chile paste |
Directions:
1. Spray or rub grill with oil. 2. Cut eggplants lengthwise and score each on cut side a few times with sharp knife. 3. Combine remaining ingredients then coat eggplant and marinate at room temperature 2 hours. 4. Grill eggplants over medium high heat 5 minutes per side then serve immediately. |
