Miso Dressed Cabbage Slaw |

Yummmy tasty cabbage. I think I have a cabbage addiction. This tasty slaw has a mayo-like dressing that would be a fabulous mayo-like dip for those veganly inclined. Ingredients:
for half a medium cabbage, thinly sliced |
1 generous tbsp brown (aka) or light (shiro) miso |
3 tbsp lemon juice |
1 tbsp white or rice vinegar |
1/2 tbsp white sugar |
1 clove garlic roughly chopped |
3-4 tbsp peanut oil |
toasted sesame seeds |
optional flavourings: a few drops sesame oil |
Directions:
1. In a blender, process all the ingredients apart from the sesame seeds. 2. The sauce should have the consistency of mayonnaise. 3. Taste and correct for acidity. 4. Mix with the cabbage and garnish with sesame seeds. |
