Misery Stuffed Pork Roast

When I am sad, I cook. I lost my best friend, my lover, my soulmate. Oddly, a recipe for a pork roast has bounced into my consciousness. While no one cares that each ingredient represents something about a lifetime of memories, everyone can care that it is an easy, unique, and delicious alternative to rubbing a roast or dousing it with apples and nuts.
Ingredients:
3 lbs pork tenderloin (boneless, cut as a roast)
1/2 lb hot sausage (bulk or chopped)
1/2 cup onion (chopped)
3 tablespoons light cream cheese
2 tablespoons strawberry jelly
1 tablespoon cilantro (dried)
1 tablespoon salt
Directions:
1. Cut pork roast in a spiral, such that it can lay flat.
2. Salt and spread cilantro on the inside of the pork roast.
3. Brown sausage without oil in a large pan.
4. Do not drain fat from pan, but remove sausage and let rest on a paper towel or draining rig.
5. Sweat onions in sausage rendering.
6. Remove onions again retaining fat in the pan.
7. Preheat oven to 375.
8. In a small mixing bowl, combine cream cheese, jelly, sausage, and onion.
9. Spoon and gently spread filling inside pork roast.
10. Roll to reassemble the roast and tie with butcher's twine.
11. Sear roast in pan with sausage renderings on all sides.
12. Move to baking dish and bake for 45-60 minutes.
13. Remove from oven and let rest for ten minutes before slicing.
