This is a local delicacy that everyone ,(or just about everyone) around here just loves, and can only get fresh in the spring, we are always looking for different way to cook them up, and here is another recipe that I found in our local newspaper, It tastes great with fish -
Ingredients:
1 cup white flour
1 cup whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon allspice
1 teaspoon salt
1 egg
1/4 cup cooking oil
1/2 cup white sugar
1 cup fiddlehead, cooked (drain well)
1/2 cup cold milk
Directions:
1. Grease and flour a 12 cup muffin tin. Preheat oven to 350°F.
2. Put all seven dry ingredients in a bowl and stir well.
3. Add egg, oil, and milk in a bowl and whisk together well.
4. Add sugar and fiddleheads.
5. Mix egg mixture to dry ingredients and mix well.
6. Bake for 20 - 25 minutes.
