I have not tried these cookies. I'm posting this for safe keeping. I found this recipe in Bake The Best Ever Cookies kids cookbook. If you eat peppermint patties all day, then this is a cookie for you. And if you love Girl Scout cookie time mostly for their famous Thin Mint cookies, then this cookie just might bring tears of joy to your eyes!
Ingredients:
1/2 cup softened butter or 1/2 cup margarine
1/3 cup granulated sugar (75 ml)
1/4 cup packed light brown sugar (50 ml)
1 egg
1 1/2 teaspoons water (7 ml)
1/2 teaspoon vanilla extract (2 ml)
1 1/2 cups all-purpose flour (375 ml)
1/2 teaspoon baking soda (2 ml)
1/2 teaspoon salt (2 ml)
24 small sized peppermint patties
24 pecan halves (optional)
Directions:
1. In a large bowl, cream the butter, gradually adding the granulated and brown sugars. Then, beat in the egg, water, and vanilla.
2. In a separate bowl, sift together the flour, baking soda, and salt. Blend it into the butter mixture.
3. Wrap the dough in waxed paper and refrigerate for at least 2 hours.
4. Preheat the oven to 375.
5. Carefully wrap a peppermint pattie in a tablespoon (15 ML) of dough. Pinch the dough tighly closed. Top each cookie with a pecan.
6. Bake for 10-12 minutes, until lightly browned. Cool on a wire rack.
