Lemon and mint give this fresh bean salad a fabulous flavor. You'll get the kids to forget they are eating veggies! Ingredients:
1lb green beans |
1 lb wax beans-yellow |
1 red pepper seeded and chopped into small pieces |
4 tbsp extra virgin olive oil |
4 tbsp lemon juice |
4 tbsp chopped fresh mint |
1/3 tsp salt |
1/3 tsp black pepper |
water |
Directions:
1. Bring pot of salted water to a roaring boil. 2. Add beans and cook 2 min or until just crisp tender 3. Drain and rinse under cold water 4. Put in serving bowl and toss beans with rest of ingredients 5. Enjoy |
