Minted Zucchini With Golden Raisins

Ingredients:
1 1/2 teaspoons olive oil
1 lb zucchini, thinly sliced
1/4 cup golden raisin
2 tablespoons chopped fresh mint
1/4 teaspoon salt
pepper
Directions:
1. In a large nonstick skillet heat oil to medium high. Add zucchini and cook, stirring often, until crisp-tender, about 5 minutes.
2. Add raisins, mint, salt and pepper. Toss to combine and serve.
