This salad looks beautiful with both colors of watermelon but you can use all one color. If ricotta salada is not available,you can use feta. Ingredients:
1 small seedless red watermelon(21/2lbs) |
1 small seedless yellow watermelon(21/2lbs) |
2 oz. ricotta salata |
1/2tsp coarse sea salt |
3tbs slice fresh mint |
Directions:
1. Using a sharp knife,cut off rinds for watermelon(should have a total or 2lbs. peeled fruit) Quarter each melon and then cut intp 3 long,1/4 thick slices/ Arrange slices on serving platter. 2. Using a vegetable peeler,shave paper-thin slices of ricotta salata over watermelon. Sprinkle with salt and mint,and serve immediately. |
