This salad is nice and light for a luncheon or light supper. Serve with with garlicy bread or salmon muffins. Ingredients:
4 ripe medium tomatoes (romas are best) |
1/2 cup plain unsweetened yogurt |
1/2 cup fresh mint leaves, minced |
8 whole mint leaves for garnish |
1/4 tsp. red chili flakes (or black pepper) |
salt to taste |
Directions:
1. Cut tomatoes into bite-size pieces, sprinkle with chilies and salt. 2. In a serving bowl, combine yogurt and mint. 3. Add tomatoes to yogurt mixture and toss gently to coat. 4. Chill, covered, until ready to serve. 5. Garnish with fresh leaves before serving. |
