Minted Strawberries and Bananas in Cantaloupe Cups |

You can skip making the cantaloupe cups and simply serve the fruit mixture in dessert bowls. You could also make cantaloupe balls and toss all the ingredients together. Ingredients:
2 cantaloupes (about 2 1/2 pounds) |
3 cups sliced strawberries |
1/2 cup orange juice |
1/4 cup sugar |
1/4 cup chopped fresh mint |
1 tablespoon lemon juice |
2 teaspoons vanilla extract |
1 1/2 cups sliced banana |
Directions:
1. Cut cantaloupes in half crosswise; discard seeds. Cover and chill. 2. Combine strawberries and next 5 ingredients (strawberries through vanilla) in a bowl. Cover and chill for 30 minutes. Stir in bananas; spoon 1 cup strawberry mixture into each cantaloupe half. |
