Minted Peas With Peppercorns |

Want a different twist on peas? This is the recipe.......it's incredible and the mint and peppercorn combination is phenominal. Enjoy Ingredients:
1/2 cup water |
3 fresh mint sprigs |
2 tablespoons unsalted butter |
1/8 teaspoon salt |
1/8 teaspoon granulated sugar |
4 cups fresh green peas |
2 teaspoons coarsely ground pink peppercorns |
1/4 teaspoon coarsely ground black peppercorns |
1 teaspoon finely chopped fresh mint |
1/2 teaspoon sea salt |
Directions:
1. Combine water, mint, butter, salt and sugar in a medium sauce pot. 2. Bring mixture to a boil and reduce to a simmer for 2 minutes. 3. Bring mixture back to a boil then add peas and cover the pan. 4. Reduce heat to medium low and simmer peas 5 minutes and remove mint sprigs. 5. Place peas in a warm bowl and stir in the peppercorns and fresh mint. 6. Season with sea salt and serve immediately. |
