Minted Pea Couscous

A tasty side dish for a Middle Eastern main. Cold leftovers are good too.
Ingredients:
1 cup vegetable stock or 1 cup chicken stock
1/2 cup frozen peas
2/3 cup couscous
1 tablespoon chopped fresh mint leaves
2 teaspoons fresh lemon juice
2 teaspoons olive oil
Directions:
1. In a small saucepan bring stock to a boil.
2. Add peas and return stock to a boil. Stir in couscous and cover pan. Immediately remove pan from heat and let couscous stand, covered, 5 minutes.
3. Fluff couscous with a fork and stir in mint, lemon juice, olive oil, and salt and pepper to taste.
