A fresh cooling tasty dessert. Ideal for picnics. Ingredients:
125g (4oz) caster sugar |
2-3 level tablespoons chopped fresh mint |
1 small orange-flesh melon, eg, charentais, de-seeded and peeled |
1/2 watermelon, peeled |
sprigs of mint, for decoration |
Directions:
1. Pour 150ml (1/4 pint) water into a small pan and add the sugar. 2. Place the pan over a medium heat and stir until the sugar dissolves. 3. Bring the mixture to the boil and boil it rapidly for 2-3 minutes to get a light syrup. 4. Remove pan from heat and leave syrup to cool. 5. When cool stir the mint into the syrup. 6. Cut both types of melon into cubes and place into a suitable container and pour the syrup over and turn the melon cubes in the syrup to coat them. 7. Cover the melon and seal the container, then chill it well. 8. Wash the sprigs of mint, and shake off excess water, and use to decorate the melon just before serving |
