This is a simple summer fruit salad option. Bite sized melon pieces tossed with a lime/honey dressing and pushed over the top with the addition of fresh mint. A melon baller can be used, of course, I just prefer the rustic look of free hand scooping! Read more ! :) Ingredients:
about 6 cups fresh melon pieces(probably about 1 cantaloupe and 1 honey dew, or half a watermelon and 1 other melon or 1 personal watermelon and another honeydew or cantaloupe... |
2 cups grapes(i used the large red grapes...not seedless. we just eat 'em whole, seeds and all, anyway ;) |
for dressing |
juice from 3 fresh limes(about 2 1/2-3t) |
1/4 cup honey |
1t vanilla |
1t kosher or sea salt |
about 5 medium/large fresh mint leaves, chopped |
Directions:
1. Place fruit in large bowl and sprinkle with salt. Toss and let rest while preparing dressing. 2. For Dressing 3. Whisk together lime juice, honey and vanilla until well combined. 4. add about 1 1/2T fresh mint leaves to dressing 5. Pour over fruit and toss, again, to coat. 6. Refrigerate at least 1 hour, if possible to chill and let flavors meld. 7. Add additional fresh mint just before serving, if desired. 8. Can also be served in the halves of the melons, used! :) |
