This is another wonderful TOH recipe I have been making since 1995. My family and friends love it! It is great during the hot summer months, and a staple at 4th of July. The dressing is very different and wonderful, looks great in a melon boat, or you can use trifle dish, either way it is a hit. For the ingredients the watermelon is about half a melon, the cantaloup is about 1 medium, the honeydew is about 1 medium, and the peaches are about 2. Ingredients:
1 cup water |
3/4 cup sugar |
3 tablespoons lime juice |
1 1/2 teaspoons fresh mint, chopped |
3/4 teaspoon anise seed |
1 pinch salt |
5 cups cubed watermelon |
3 cups cubed cantaloupe |
3 cups cubed honeydews |
2 cups peaches, sliced |
1 cup fresh blueberries |
Directions:
1. In a small saucepan, bring the first six ingredients to a boil. 2. Boil 2 minutes;remove from heat. 3. Cover and cool completely. 4. Combine the fruit in a large bowl;add syrup and stir to coat. 5. Cover and chill for at least 2 hours, stirring occasionally. 6. Drain before serving. |
