Minted Melon-Cucumber Salad |

Ingredients:
2 cups cubed cantaloupe |
2 cups cubed watermelon |
1 cup thinly sliced cucumber (about 1 small cucumber) |
2 tablespoons chopped fresh mint |
2 tablespoons sugar |
1 tablespoon minced onion |
3 tablespoons raspberry-flavored vinegar |
Directions:
1. Combine first 4 ingredients in a large bowl. 2. Combine sugar, onion, and vinegar in a small jar. Cover tightly, and shake vigorously. Pour over melon mixture; toss gently. 3. Serve immediately, or cover and chill up to 2 hours. Serve with a slotted spoon. |
