MINTED GREEN PEAS WITH LETTUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Whitcomb Estate in Richardson Texas in 1994. Ingredients:
2 tablespoons butter |
10 ounces frozen peas |
1 tablespoon chopped fresh mint |
2 tablespoons minced parsley |
1/2 teaspoon salt |
1/2 teaspoon granulated sugar |
mint sprigs for garnish |
Directions:
1. In a large skillet over medium heat melt butter. 2. Add peas then cover and cook 5 minutes. 3. Add lettuce, chopped mint and parsley and cook uncovered until lettuce wilts. 4. Toss occasionally then season with salt and sugar and garnish with mint. |
