From The Winemaker Cooks by Christine Hanna. Make sure the peas are really fresh with firm green pods, otherwise you may as well buy frozen. Ingredients:
2 tablespoons unsalted butter |
1 1/2 lbs green peas, in the pods shucked |
2 tablespoons finely chopped fresh mint |
salt & freshly ground black pepper |
Directions:
1. Melt the butter over medium heat in a medium saute pan until just foaming. Add the peas and saute for 2 to 3 minutes, or until just cooked through but not soft. Stir in the mint and salt and pepper to taste. Serve at once. |
