Minted Blackeye Peas and Rice With Feta |

This is a slight adaptation to a recipe i found . i found it quite tasty and different from my other bean and rice lunch concoctions. I'm only counting heating time in prep. as i always have cooked rice and beans on hand. my yard will soon be over run with mint. this will be a nice use for it. Ingredients:
3/4 cup cooked brown rice |
1/2 cup cooked black-eyed peas |
1 tablespoon feta cheese, crumbles |
1 tablespoon mint leaf, chopped |
1 1/2 tablespoons green onions, sliced |
1/4 teaspoon chicken bouillon |
1 dash pepper |
Directions:
1. heat up rice and peas 2. mix in remaining. 3. enjoy. |
