A different way to serve beets. If you would like to try making your own mint jelly try this recipe Old Fashion Apple-Mint Jelly. The honey in this mint jelly goes well with the beets in this recipe. Ingredients:
2 lbs beets |
1 cup water |
3/4 cup salt |
3 tablespoons mint jelly |
2 tablespoons butter |
Directions:
1. Pare beets and cut into cubes. 2. Bring salted water to a boil and add beets, reduce heat and simmer for about 40 minutes or until tender. 3. Drain beets and add butter and jelly, continue cooking until beets are glazed. |
