This recipe comes from The Best Seafood Recipes by The Australian Womens Weekly. This is a very easy recipe and the result is quite delicious. I used ling fillets and they recommend Ocean Perch Fillets. Ingredients:
6 large white fish fillets |
425 g apricot nectar |
30 g french onion soup |
1 tablespoon lemon juice |
2 tablespoons fresh mint, chopped |
Directions:
1. Place fish in baking dish in single layer. 2. Combine remaining ingredients and pour over fish. 3. Cover and bake in moderate oven for about 45 minutes until fish is tender. 4. You can uncover for last few minutes to get a caramelized finish. |
