Ingredients:
1 1/3 cup(s) water |
3 tablespoon(s) olive oil |
1 teaspoon(s) ground cumin |
2 teaspoon(s) honey |
1 cup(s) couscous |
4 fresh apricots halved and pitted |
1/2 hothouse, seedless cucumber 1/4 in. dice |
3 tablespoon(s) fineyl chopped mint leaves |
1 tablespoon(s) fresh squeezed lemon juice |
salt and pepper to taste |
Directions:
1. In a large saucepan, over med-hi heat, bring water, olive oil, honey, and cumin to a boil. Stir in couscous and immediately remove pan from heat. Cover pan and set aside for 5 minutes. 2. Fluff couscous and add remaining ingredients. |
