Mint Yogurt Dip (For Fruit)

Made for strawberries but would be good with many other fruits.
Ingredients:
1 quart vanilla yogurt, thickened (plain with a little sugar and vanilla ok)
1 tablespoon mint, fresh minced (and some for garnish)
1/4 teaspoon lemon rind, grated
3 tablespoons honey
Directions:
1. Thicken yogurt by suspending in a strainer lined with coffee filter or cheesecloth for 24 hours (not included in time).
2. Discard liquid.
3. Whisk all ingredients together.
4. Garnish.
5. Serve with fruit.
