Mint Scented Jasmine Rice With Edamame |

This is a very pretty delicately flavored rice dish that would go well beside fish or poultry. Or that other white meat pork. Ingredients:
2 cups jasmine rice - cooked (i used uncle ben's ready rice) |
1 cup edamame - boiled and shelled |
1 tbsp dried mint |
Directions:
1. Prepare the rice. 2. If you are using edamame in the shell make sure to boil them first then shell them. When I boil mine I usually salt the water and shake in a bit of tabasco - but thats just me. 3. Toss the Edamame, mint and the Rice together well and serve. |
