An attractive cookie with a minty surprise in the middle! Betty Crocker's Best Of Baking. Ingredients:
1/2 cup margarine or butter, softened |
1/2 cup shortening |
1 cup sugar |
1 egg |
2 1/2 cups all-purpose flour |
1 tsp. baking powder |
1/4 tsp. salt |
3 dozen rectangular chocolate mints |
Directions:
1. Mix margarine or butter, shortening, sugar and egg in large bowl. 2. Stir flour, baking powder and salt. 3. Cover and refrigerate about 1 hour or until firm. 4. Heat oven 400 degrees. 5. Roll half of dough into rectangle, 13X9-inches, on floured surface. 6. Place mints on dough, forming 6 uniform rows of 6. 7. Roll remaining dough into rectangle, 13X9-inches, on floured waxed paper. 8. Place over mint-covered dough and remove waxed paper. 9. Cut between mints with pastry wheel or knife and press edges with fork to seal. 10. Place on ungreased cookie sheet. 11. Bake 7 to 9 minutes or until light brown. 12. Remove from cookie sheet. |
