Different twist to the standard basil pesto, mint is wonderful and the fragrance when it hits the hot bread is intoxicating. Ingredients:
1 cup of packed mint leaves |
1/3 cup of olive oil |
1/4 cup of parmesan cheese |
2 cloves of garlic |
1/2 tsp of salt |
1/4 cup of walnuts |
loaf of french bread |
Directions:
1. Grind the mint, nuts and other ingredients in food processor to make a paste. 2. Cut a loaf of French Bread in thick slices. 3. On an outdoor charcoal or gas grill, grill slices of bread on one side unti they are toasted. 4. Do not let them burn. 5. Flip them over and spread the toaste side with the mint mixture and let them stay on the grill jut until the other side is toasted. 6. Serve right away. |
