Add a pop of color and garden-fresh flavor to any main-dish meat. This pesto is great over steak, chicken, lamb, pork, and fish. Simply top the meat after grilling, or just serve the pesto on the side. Ingredients:
2 cups loosely packed fresh mint leaves |
1/2 cup grated parmesan cheese |
1/3 cup olive oil |
1/4 cup pine nuts |
1/4 cup cold water |
2 garlic cloves |
1 tablespoon lemon juice |
Directions:
1. Process all ingredients in a food processor until smooth, stopping to scrape down sides as needed. |
