Cool refreshing summer salad. Ingredients:
3 medium cucumbers, peeled, seeded and thinly sliced |
1/2 cup chopped onion |
1 teaspoon salt, to taste |
1/4 teaspoon pepper |
1 tablespoon finely chopped fresh mint |
1 garlic clove, minced |
3/4 teaspoon dried oregano |
8 ounces plain yogurt, can use vanilla yogurt |
2 tablespoons heavy cream |
Directions:
1. Place cucumbers and onion in a mixing bowl. 2. Combine remaining ingredients in a small bowl; mix well. Pour over cucumber/onion salad. Toss to coat well. 3. Chill at least 3 hours before serving. |
