This recipe goes with Moroccan Spiced Patties Ingredients:
1 1/2 cups uncooked plain instant couscous |
1 medium zucchini (halved lengthwise and thinly sliced, 2 cups) |
1 tablespoon lemon juice |
1 teaspoon kosher salt |
3 tablespoons olive oil |
1 chopped medium tomato (1 cup) |
1/3 cup chopped fresh mint |
1/2 cup golden raisins |
Directions:
1. Place instant couscous in a large bowl and add 2 cups boiling water. Cover with plastic wrap and set aside for 5 minutes. Uncover and fluff with a fork. Add lemon juice, kosher salt, olive oil, zucchini, tomato, fresh mint, raisins. Toss until well combined. |
