Clipped from the Courier Times courtesy of , a food blog. This delicious conconction is vegan, healthy, and makes a nice splash from traditional basil pesto for sandwiches, pizza, and pasta. Keeps a bit longer as it doesn't require cheese. Ingredients:
4 cups packed fresh mint leaves |
1/3 cup blanched almond |
2 garlic cloves |
1/4 cup olive oil (plus extra if needed) |
sea salt |
black pepper |
Directions:
1. Put all the ingredients into a food processor or chopper and run it through until finely chopped. Makes about 2/3 cup. |
