Ingredients:
3 egg whites |
1/4 teaspoon cream of tartar |
1/8 teaspoon salt |
1 teaspoon vanilla extract |
1/2 cup superfine sugar |
1 cup whipping cream, whipped |
2 cups fresh fruit (kiwifruit, blueberries, strawberries, raspberries, blackberries, mandarin oranges) |
Directions:
1. Beat first 4 ingredients at high speed with an electric mixer until foamy. 2. Add sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar dissolves. 3. Drop mixture by rounded tablespoonfuls onto parchment-lined baking sheets. Spread into 2-inch circles, shaping with back of a spoon to make shallow bowls. 4. Bake at 225° for 1 hour or until dry on outside; turn oven off. Let stand in closed oven 1 hour. 5. Spoon whipped cream evenly into meringues; top with fruit. Serve immediately. |
