Mini Yummy Breakfast Quiche |

These crustless quiches are like portable omelets! Ingredients:
60 g. turkey pepperoni (about 28 slices) |
1 tsp. extra virgin olive oil |
1/3 c. bell pepper, sliced |
1/4 c. scallions, sliced |
1/4 c. swiss cheese, shredded |
1 tsp. pepper |
5 eggs |
3 egg whites |
1 c. 1% milk |
Directions:
1. Pre-heat oven to 450 degrees. 2. Place pepperoni on baking sheet in single layer. Bake untit crisp, about 12-15 min. 3. Meanwhile saute bell peppers in the oil 2-3 min. Transfer to a bowl and add scallions, cheese, crumbled pepperoni and pepper. 4. Lower oven Temp. to 325 degrees. 5. Whisk remaining ingredients in separate bowl and divide evenly among the prepared muffin cups. Sprinkle a heaping tablespoon of pepperoni mixture in each cup. 6. Bake until the tops are just beginning to brown, 25 min. |
