Mini Wonton Salsa Baskets |

So simple, yet elegant enough for Sunday Best. This comes from my Almost Homemade by Gooseberry Patch. Ingredients:
24 wonton wrappers |
15 1/4 ounces corn (drained) |
16 ounces black beans (drained and rinsed) |
16 ounces kidney beans (drained and rinsed) |
8 ounces salsa (we like herdez) |
1/2 cup cilantro (chopped or optional) |
1/2 cup green onion (chopped or optional) |
1 cup cheddar cheese (shredded) |
Directions:
1. Sray 24 mini muffin cups with non-stick vegetable spray; press a wonton wrapper into each cup, bake at 350 for 10 min.until crisp. 2. Mix together corn, beans and salsa; spoon into cups, top with green onions, cilantro and cheese. 3. Enjoy. |
