Found this in a healthy kids cookbook Ingredients:
1 small onion, chopped |
1/2 cup tortilla chips, crushed |
1 lb ground turkey |
3/4 cup salsa |
1 egg |
1 teaspoon cumin |
1 teaspoon chili powder |
1/4 teaspoon salt |
6 tablespoons salsa |
1/2 cup colby jack cheese, shredded |
Directions:
1. Preheat oven to 375 degrees. 2. In a medium bowl, mix the onion, tortilla chips, turkey, 3/4 cup salsa, egg, cumin, chili powder and salt. Blend together until well mixed. 3. Divide the mixture into 6 equal portions. Shape each one into loaves on a greased cookie sheet. 4. Bake for 25 minutes. Remove from oven and top each one with 1 tbsp salsa and sprinkle with cheese. Bake for another 5 minutes or until the cheese is melted. 5. Remove from oven and serve. |
