When I was little one of my favorite things was spinach pie. This is the recipe I came up with after years of perfecting it. It is truly a delicious treat. It is still one of my favorites. Ingredients:
16oz frozen spinach (thawed) |
8oz mozzeralla cheese |
4oz feta cheese |
2 frozen pie crusts (thawed) |
1 tsp onion powder |
1 tbs garlic powder |
pinch of nutmeg |
1/2 tsp salt |
2 tsb olive oil |
1 egg |
Directions:
1. Set oven to 400 degrees 2. Saute spinach and olive oil in pan 3. Cut 12-3 circles from unrolled pie crusts (I use a large mug) 4. Greese or spray insides of large cupcake pans 5. In large bowl mix egg, spices, cheeses 6. Add spinach to bowl and mix well 7. Line insides of greesed cupcake pans with circles from pie crusts to form little bowls 8. Fill each with spinach/cheese mixture 9. (optional) Top with remaining dough (smaller circles) 10. Place in oven for 15-20 minutes or unil done 11. Eat and enjoy! |
