Mini Smoked Cheddar and Granny Smith Apple Sandwiches With Roast |

Everyone that has tried this recipe thinks EEW apples and cheese but it is a really fabulous combination and ends up being the favorite at my luncheons. Ingredients:
1 loaf sourdough bread (use your favorite bakery and shape) |
1 granny smith apple, sliced in thin 1/4 inch wedges |
1/2 lb cheese, yellow smoked cheddar, thinly sliced |
1/2 lb cheese, white oak smoked cheddar, thinly sliced |
1/2 cup mayonnaise, store bought & high quality |
1 red onion, large |
1 teaspoon salt |
1 teaspoon pepper |
1 tablespoon olive oil |
1/4 cup softened butter |
Directions:
1. *Cut ends and peel paper off of onion, wrap in foil and place in 350 degree oven to roast for 30 - 40 minutes. Allow to cool. 2. *Place onion, mayo, olive oil, salt & pepper in a food processor and blend until completely smooth. 3. *Slice bread into the desired shape and size. I like to do small 3x3 sandwiches for parties, but you can make them regular full serving size if desired. 4. *Spread mayo on each slice of bread. Add slices of both cheese types and apple to the bread and make a sandwich. 5. *Spread softened butter on outside of sandwich and cook on a grill pan until cheese is melted and outsides are golden brown. 6. *Serve hot or at room temperature. |
