Mini Salsa Chicken Loaves |

Taken from an Ontario Chicken Lovers cookbook Ingredients:
1 lb ground chicken |
1 cup salsa, divided |
3/4 cup corn |
1/3 cup breadcrumbs |
2 teaspoons chili powder |
1/4 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Combine chicken, 3/4 cup of salsa, corn, bread crumbs, chili powder, salt and pepper. 2. Shape into 4 even sized loaves and arrange on a microwave safe roasting rack. 3. Spoon remaining salsa over loaves. 4. Cover with waxed paper and microwave on high for 8-12 mins or until no longer pink. 5. Let stand covered for 5-10 minutes to complete cooking. |
