Ingredients:
2 cup(s) milk |
4 eggs |
3/4 cup(s) biscuit mix |
1/4 cup(s) butter |
1 cup(s) parmesan cheese |
8 ounce(s) shredded cheddar colby cheese |
10 ounce(s) frozen chopped spinach |
1 onion |
2 clove(s) garlic |
1/2 cup(s) mushrooms |
Directions:
1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease some muffin tins 2. Melt some butter in a sauce pan. Cook up the onion and garlic. Toss in spinach and cook through. 3. In a large bowl, beat together milk, eggs, baking mix, butter and parmesan cheese. Batter will be lumpy. Stir in veggie mixture and Cheddar cheese. Add salt and pepper to taste. Pour into prepared quiche dish. 4. Bake in preheated oven for 30 minutes, until eggs are set and top is golden brown. |
