I first had these at a tea in Cape May. The recipe was given to my from a caterer. The mini crusts are made in the mini-tins. Ingredients:
crust: 1 cup flour |
3 oz. cream cheese |
1/2 cup butter |
filling: 1/2 cup chopped onion |
1 tbsp. olive oil |
1/2 cup sour cream |
1 egg, slightly beaten |
1/2 cup swiss cheese |
1/4 tsp salt |
dash pepper |
Directions:
1. Crust: Mix the flour, cheese and butter tog. Chill for 1 hr. Roll into 12 balls, each for 1 crust. 2. Filling: Saute the onions in the oil. Cool. 3. Add the sour cream, egg, swiss cheese, salt and pepper. 4. Shape little crust in 12 mini-cupcake tins. 5. Add filling. 6. Bake 350 degrees for 25 to 30 minutes. |
