I used this easy recipe to make some cute mini pumpkin cupcakes, yummy any time of the year! Ingredients:
2 eggs |
1 cup sugar |
1/2 cup oil |
7 oz pumpkin |
1 cup flour |
1 tsp baking soda |
1 tsp baking powder |
1/4 tsp salt |
1 tsp cinnamon |
4 oz cream cheese |
4 tbsp butter |
1 cup powdered sugar |
1/2 tsp vanilla |
Directions:
1. Preheat oven to 350 2. Mix together flour, baking soda, baking powder, salt, and cinnamon 3. In separate dish, mix together eggs, sugar, and oil. 4. Add in pumpkin and mix well. 5. Slowly add in flour mixture and mix 6. Pour into 12 regular sized, or 24 mini sized cupcake pan 7. For mini cupcakes I baked them about 15 minutes 8. Mix together cream cheese, butter, and vanilla until creamy. Stir in powdered sugar. Use to pipe or frost cupcakes |
